Lemon Berry Tiramisu

I love to incorporate berries into dessert dishes. Berries have such a sweet, fresh taste, plus they are filled with antioxidants so where can you go wrong?! This lemon berry tiramisu is one of my favorites and it is perfect for a summer barbecue. It’s light and fresh and the mixture of the sweet berries with the zesty lemon create the perfect combination. Don’t forget to check out my delicious Cookie Butter Pie while you’re here!


PREP TIME: 35 mins
TOTAL TIME: 3 hours


  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/2 teaspoon grated lemon peel
  • 3/4 cup lemon juice
  • 2 8 ounce containers Mascarpone cheese
  • 1/2 cup heavy whipping cream
  • 6 tablespoons powdered sugar
  • 2.5 teaspoons vanilla extract
  • 1.5 packages soft ladyfingers (7.1 ounces each) OR a family size loaf of pound cake (16 ounces) sliced a little wider than a quarter inch
  • 3 cups fresh mixed berries (I typically use raspberries, blueberries, strawberries and blackberries)


  1. In a 2 qt. sauce pan, heat granulated sugar, water, lemon juice, and lemon zest to boiling. Boil until sugar is dissolved. Remove from heat and cool completely.
  2. Pour heavy whipping cream, 2 tablespoons of powdered sugar and 1/2 teaspoon vanilla extract into bowl. Whisk together on high speed until stiff peaks form (about 1 minute). Set aside.
  3. Beat Mascarpone Cheese, whipped cream, the remaining 4 tablespoons of powdered sugar and remaining 2 teaspoons vanilla extract together.
  4. Line bottom of 8 inch square dish with half of ladyfingers. Brush about a 1/4 of lemon syrup over the ladyfingers. Top ladyfingers with half of Mascarpone mixture and spread evenly.
  5. Top with half of mixed berries and brush about 1/4 lemon syrup.
  6. Repeat layers until all ingredients are used.
  7. Refrigerate for at least 2.5 hours or overnight.


  • Too lazy to make your own whipping cream? Just use a cup of Coolwhip in lieu of 1/2 cup heavy whipping cream, 2 tablespoons of powdered sugar and 1/2 teaspoon vanilla extract.
  • When I say generously coat with the lemon syrup, I mean really cover the ladyfingers and berries. If you are using pound cake instead of ladyfingers, remember that pound cake is much more dense than ladyfingers so it can hold more liquid before it gets soggy.

My Favorite Holiday Pie Recipe: Cookie Butter Pie


There is no better excuse to indulge in delicious food than during the holidays. All the sweet treats, carb loaded casseroles, Christmas tree shaped Reeses, I mean the list goes on. Thanksgiving and Christmas are the only two times a year when I make my special Cookie Butter Pie. It has to be one of my favorite pies. Not only is it super simple but it’s also rich and tastes just like Cookie Butter. If you have never been to Trader Joes and had Cookie Butter, its basically the same thing as Biscoff Cookie spread that you can buy at the grocery store. I would be so satisfied with just one bite but since I have zero self control I always have way too much and get a huge sugar high. Every time I make this pie is always a hit so enjoy! PREP TIME: 15 mins
TOTAL TIME: 3 hours 15 mins
SERVES: 8ish

  • 30ish Biscoff Cookies
  • 4 tbsp Salted or Unsalted Butter
  • 1/2 cup or 4oz White Chocolate
  • 1/4 cup or 2oz Heavy Cream
  • 1 8oz Cream Cheese
  • 1 14oz Jar Cookie Butter/Biscoff Spread
  • 1 tsp Pure Vanilla Extract
  • 2 tbsp Heavy Whipping Cream
  • 1 7oz Jar of Marshmallow Fluff
  • 1 8oz Container Cool Whip (thawed)


  1. Using a food processor, grind the Biscoff cookies into fine crumbs.
  2. In the microwave, melt the butter and mix with the Biscoff crumbs so all the crumbs are moistened.
  3. Pour the moistened crumbs into a 9″ pie pan and using a spoon or glass cup, compact the crust in the pan. Set aside.
  1. Combine the white chocolate and heavy cream (1/4 cup) in a microwave-safe bowl. Microwave on high for 45 seconds and mix vigorously. Microwave on high for another 30 seconds and mix until all the chocolate is melted. Allow the mixture to cool, place in the fridge if necessary.
  2. Whip the cream cheese until light and fluffy, about 2 minutes.
  3. Add jar of Cookie Butter and continue to mix until well blended.
  4. Add the cooled white chocolate to the Cookie Butter and cream cheese mixture until combined. Be sure to scrape the sides and bottom of the bowl.
  5. Add the vanilla extract and heavy whipping cream (2 tbsp), increase the mixing speed  to medium-high and whip for about 2 minutes to add air into the batter.
  6. Combine the jar of marshmallow fluff to the batter and mix throughly, making sure to scrape the sides and bottom of the bowl.
  7. Empty the Cool Whip into the batter and gently fold into the batter. Avoid over mixing as this will cause the filling to not be as fluffy.
  8. Pour the filling into the pie crust and smooth out the top. Place in the fridge for at least 3 hours. Serve chilled.
  • If you don’t have heavy cream, you can substitute heavy whipping cream.
  • To jazz up the top add crushed Biscoff cookies or drizzle white chocolate.
  • This pie still tastes delicious even with a store-bought graham cracker crust.

Planning a party always sounds so much better when its planned in your head. You think of how fun it will be to go to Michaels and get decorations, how yummy the food will taste when its cooking on the grill and how everyone will be having a good time because alcohol will be flowing.

But when it comes to actually sitting down and executing, planning a party sounds awful. You’ll have to find food recipes, create shopping lists and imagine what decor you could buy without having your backyard look like a huge glittery red white and blue bomb went off.
