Lemon Berry Tiramisu

lemon berry tiramisu

I love to incorporate berries into dessert dishes. Berries have such a sweet, fresh taste, plus they are filled with antioxidants so where can you go wrong?! This lemon berry tiramisu is one of my favorites and it is perfect for a summer barbecue. It’s light and fresh and the mixture of the sweet berries with the zesty lemon create the perfect combination. Don’t forget to check out my delicious Cookie Butter Pie while you’re here!

LEMON BERRY TIRAMISU RECIPE

PREP TIME: 35 mins
TOTAL TIME: 3 hours
SERVES: 8-9

INGREDIENTS

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/2 teaspoon grated lemon peel
  • 3/4 cup lemon juice
  • 2 8 ounce containers Mascarpone cheese
  • 1/2 cup heavy whipping cream
  • 6 tablespoons powdered sugar
  • 2.5 teaspoons vanilla extract
  • 1.5 packages soft ladyfingers (7.1 ounces each) OR a family size loaf of pound cake (16 ounces) sliced a little wider than a quarter inch
  • 3 cups fresh mixed berries (I typically use raspberries, blueberries, strawberries and blackberries)

INSTRUCTIONS

  1. In a 2 qt. sauce pan, heat granulated sugar, water, lemon juice, and lemon zest to boiling. Boil until sugar is dissolved. Remove from heat and cool completely.
  2. Pour heavy whipping cream, 2 tablespoons of powdered sugar and 1/2 teaspoon vanilla extract into bowl. Whisk together on high speed until stiff peaks form (about 1 minute). Set aside.
  3. Beat Mascarpone Cheese, whipped cream, the remaining 4 tablespoons of powdered sugar and remaining 2 teaspoons vanilla extract together.
  4. Line bottom of 8 inch square dish with half of ladyfingers. Brush about a 1/4 of lemon syrup over the ladyfingers. Top ladyfingers with half of Mascarpone mixture and spread evenly.
  5. Top with half of mixed berries and brush about 1/4 lemon syrup.
  6. Repeat layers until all ingredients are used.
  7. Refrigerate for at least 2.5 hours or overnight.

TIPS

  • Too lazy to make your own whipping cream? Just use a cup of Coolwhip in lieu of 1/2 cup heavy whipping cream, 2 tablespoons of powdered sugar and 1/2 teaspoon vanilla extract.
  • When I say generously coat with the lemon syrup, I mean really cover the ladyfingers and berries. If you are using pound cake instead of ladyfingers, remember that pound cake is much more dense than ladyfingers so it can hold more liquid before it gets soggy.

My Favorite Holiday Pie Recipe: Cookie Butter Pie

biscoff-pie-recipe-holiday-dessert

There is no better excuse to indulge in delicious food than during the holidays. All the sweet treats, carb loaded casseroles, Christmas tree shaped Reeses, I mean the list goes on. Thanksgiving and Christmas are the only two times a year when I make my special Cookie Butter Pie. It has to be one of my favorite pies. Not only is it super simple but it’s also rich and tastes just like Cookie Butter. If you have never been to Trader Joes and had Cookie Butter, its basically the same thing as Biscoff Cookie spread that you can buy at the grocery store. I would be so satisfied with just one bite but since I have zero self control I always have way too much and get a huge sugar high. Every time I make this pie is always a hit so enjoy! Don’t forget to check out my Lemon Berry Tiramisu, it’s super easy and a real crowd pleaser!

COOKIE BUTTER PIE RECIPE

PREP TIME: 15 mins
TOTAL TIME: 3 hours 15 mins
SERVES: 8ish

INGREDIENTS
FOR CRUST:
  • 30ish Biscoff Cookies
  • 4 tbsp Salted or Unsalted Butter
FOR FILLING:
  • 1/2 cup or 4oz White Chocolate
  • 1/4 cup or 2oz Heavy Cream
  • 1 8oz Cream Cheese
  • 1 14oz Jar Cookie Butter/Biscoff Spread
  • 1 tsp Pure Vanilla Extract
  • 2 tbsp Heavy Whipping Cream
  • 1 7oz Jar of Marshmallow Fluff
  • 1 8oz Container Cool Whip (thawed)

CRUST INSTRUCTIONS
  1. Using a food processor, grind the Biscoff cookies into fine crumbs.
  2. In the microwave, melt the butter and mix with the Biscoff crumbs so all the crumbs are moistened.
  3. Pour the moistened crumbs into a 9″ pie pan and using a spoon or glass cup, compact the crust in the pan. Set aside.
FILLING INSTRUCTIONS
  1. Combine the white chocolate and heavy cream (1/4 cup) in a microwave-safe bowl. Microwave on high for 45 seconds and mix vigorously. Microwave on high for another 30 seconds and mix until all the chocolate is melted. Allow the mixture to cool, place in the fridge if necessary.
  2. Whip the cream cheese until light and fluffy, about 2 minutes.
  3. Add jar of Cookie Butter and continue to mix until well blended.
  4. Add the cooled white chocolate to the Cookie Butter and cream cheese mixture until combined. Be sure to scrape the sides and bottom of the bowl.
  5. Add the vanilla extract and heavy whipping cream (2 tbsp), increase the mixing speed  to medium-high and whip for about 2 minutes to add air into the batter.
  6. Combine the jar of marshmallow fluff to the batter and mix throughly, making sure to scrape the sides and bottom of the bowl.
  7. Empty the Cool Whip into the batter and gently fold into the batter. Avoid over mixing as this will cause the filling to not be as fluffy.
  8. Pour the filling into the pie crust and smooth out the top. Place in the fridge for at least 3 hours. Serve chilled.
TIPS
  • If you don’t have heavy cream, you can substitute heavy whipping cream.
  • To jazz up the top add crushed Biscoff cookies or drizzle white chocolate.
  • This pie still tastes delicious even with a store-bought graham cracker crust.

Fourth of July BBQ

fourth of july bbq guide

Planning a party always sounds so much better when its planned in your head. You think of how fun it will be to go to Michaels and get decorations, how yummy the food will taste when its cooking on the grill and how everyone will be having a good time because alcohol will be flowing.

But when it comes to actually sitting down and executing, planning a party sounds awful. You’ll have to find food recipes, create shopping lists and imagine what decor you could buy without having your backyard look like a huge glittery red white and blue bomb went off.

Lucky for you, not only do I love planning but I also love themed parties (and dessert but who is keeping track)! Celebrating a national holiday gives you the opportunity to throw great themed party and gives you the excuse to invite all of your friends over to day drink.

Here are some great decor, food and drink ideas so you can throw a fun Fourth of July BBQ with only half the work!

fourth of july decorations

Burlap Starfish Wreath Ι Easy Patriotic Table Decor Ι Patriotic String Lights Ι Mason Jar Candles

If you are short on time, it doesn’t get much easier than dropping some red and blue food coloring into flower vases to make your space look festive. If you have time to kill, I would go for the Patriotic String Lights. They will look super cute when it gets dark.

fourth of july drinks

Firecracker Jello Cups Ι Red White and Blue Sangria Ι Refreshing Strawberry Tea

Drinks are a huge aspect of any party. If your guests are drunk enough they won’t care about the food or decor since they will be three sheets to the wind. To make the Firecracker Jello Cups adult friendly, sub half of the cold water with the vodka of your choice.

fourth of july food

Slow Cooker Smoky Baked Beans Ι Blue Cheese Stuffed Burger Ι Creamy Pesto Pasta Salad Ι Parmesan Garlic Grilled Corn Ι Beer Cheese Chicken Pretzel Sliders

The key to a great BBQ is the food. BBQ cuisine is all about grilling, pasta salad and baked beans. The Creamy Pesto Pasta Salad is a fancy twist on a BBQ Classic. If you’re short on time grab a rotisserie chicken to make the Beer Sliders recipe even simpler.

fourth of july desserts

Apple, Rhubarb and Raspberry Pie Ι Coconut Water and Berry Popsicles Ι Red, White and Blue Berry Cake Ι Red, White and Blue Fruit Salad Ι Summer Berry Tart

The dessert has to be my favorite aspect of a party (really aspect of life). If you are looking for a healthy option, a berry fruit salad it the perfect choice. Or if you are planning a cookout BBQ by the pool, coconut water and berry popsicles are both tasty and healthy!

You can easily whip this cake up after work, leave it in the fridge overnight and it will be ready when you wake up! If you are short on time, just leave it in the fridge for 4 hours and it will be good to go!

FIRECRACKER CAKELETTES

she knows firecracker cake

If you are anything like me and love everything cake related (cupcakes, cake pops, cake batter ice cream and cakes), you will love these. They are basically miniature cakes with a sweet surprise in the middle.

PATRIOTIC BERRY TRIFLE

You can never go wrong with a dessert trifle. If you want to make this dessert even more festive, you can cut the angel food cake or pound cake with a star shaped cookie cutter. Or if you wanted to give this classic a little twist, you can drizzle a mixture of lemon and sugar syrup on the cake before layering on the berries.

If you are looking for a recipe easy enough for your kids to follow and help with, this one is perfect. Plus, any recipe that does not require baking is a winner in my book!

Patriotic Pizza

Patriotic Fruit Pizza

This recipe puts a healthy twist on the classic sugar cookie. Well, I’m not sure if a sugar cookie could ever be considered healthy, but it does include fruit!

Patriotic No-Bake Cake Batter Truffles

If you love eating cake batter and raw cookie dough, these are perfect for you. There are no eggs (or baking) involved so you can eat as many as you want and you don’t have to worry about getting sick (like I really get worried anyways).

Firecracker Bundt Cake

I am not a huge fan of bundt cakes, but if I came across one that looked this pretty I don’t think I would be able to resist it. The best part is you just make one box of cake mix and use food coloring to make it look super patriotic.

Firecracker Sugar Cookies

If you are being super lazy or hate baking, this recipe is calling your name. You can simplify this recipe by buying Pillsbury refrigerated cookie dough, pre-made icing and pop rocks. I mean, this is so easy you could probably do it after half a bottle of wine.

Flag Fruit

Easy-Flag-Fruit-Dessert-family fresh meals

This dessert is perfect for all you health fanatics who eat clean and don’t eat tasty, sugary, delicious desserts. Not sure who or why anyone would want to live like that, but at least it looks festive.

Blueberry Pie

Top a slice of this delicious blueberry pie with a scoop of vanilla bean ice cream and you have the perfect dessert for a BBQ. Not a big fan of blueberry pie? Apple might not look as festive but it is an American Classic.
